Nothing can beat a good rolled oat biscuit. For me, the sweet warm smell of freshly baked rolled oats transports me to a younger Kess. A small Kess sitting at our kitchen bench, licking the old and slightly disheveled wooden spoon mum used to bake with ( I still use the same spoon to this day, there is something oddly marvellous and sentimental about it).
These might not be the most healthy morsels, but they sure as hell put a smile on your face and I can guarantee your friends and family will thank you dearly for your efforts.
Chocolate Dipped Rolled Oats
1/2 cup plain flour
1 cup rolled oats
1/2 cup shredded coconut
1 cup caster sugar
1 teaspoon bicarb soda
1 table spoon hot water
1 table spoon syrup
125 grams butter
1 table spoon coconut oil
White and milk chocolate
Basically, add all the dry ingredients but the soda in a bowl and mix. In a pot melt the butter, coconut oil and syrup. Dissolve the soda in the 1 table spoon of water and add that mixture to the pot of syrupy butter goodness. It will bubble up like a volcano. Add this liquid gold to the dry ingredients and mix. Roll into balls and bake in oven for 15-20 minutes at 180 degrees. Melt the milk chocolate and dip the biscuits into the mixture. Place on tray and cool in fridge. Once set, melt the white chocolate and drizzle on top. place in fridge to set.
Take out of fridge and enjoy!
